  • 1 Measuring cup for portioning

Ingredients
  

Salmon Patties 1

  • 15 oz Canned Pink Salmon
  • 1/4 cup All-Purpose Flour
  • 1 Egg
  • 1/4 cup Celery, finely chopped
  • 1/4 cup Onion, finely chopped
  • 1 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Canola Oil (for frying)

  • 18 oz Skinless, boneless pink salmon
  • 1/2 cup Real mayonnaise
  • 1/2 Lemon juice
  • 1 Large egg, beaten
  • 1/2 cup Finely chopped green onions
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon Creole seasoning (or Old Bay)
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Coarse ground black pepper

  • Start by draining and flaking the canned salmon. Mix it with crushed crackers, beaten eggs, and seasonings like salt, pepper, and garlic powder. Make sure to mix well but avoid overmixing.

  • Shape the salmon mix into patties. You can use your hands or a mold for uniform size. Chilling the patties in the fridge for 30 minutes helps them keep their shape.

Notes

Temperature and time are usually the culprits if the salmon patties don't cook properly. Watch the heat in the skillet to be sure the oil doesn't get too hot, we want the patties to sizzle in the hot oil, but not burn. Also, don't rush the patties while they cook. We need to give the salmon patty ingredients time to connect and firm up, usually about 8 minutes on the first side, and about 5-6 minutes after you flip them.
